ENGLISH BELOW (AFTER THE PIC)
ENGLISH PLEASE!
We had at home some carrots and beetroots that were screaming USE MEEEEE!!!
I hadn’t bought any of the two. The beetroots were a present from the parents of Bear; the carrots a leftover from some guest.
I didn’t know what to do with them and in the end I roasted them in the oven, Ottolenghi-style. They were nice. They would have been nicer if I hadn’t burnt them. Oh, well. Next time!
OVEN BAKED CARROTS AND BEETROOTS
For 2 people
10 carrots
5 beetroots
3 tablespoons of honey
2 tablespoons of xv olive oil
2 teaspoons ground coriander
1 ½ teaspoons ground cumin
salt&pepper
I peeled and washed the carrots and I cut them into sticks.
I washed the beetroots with a brush, but I didn’t peel them. I cut them into wedges.
I put the carrots and the beetroots in a bowl, I added the other ingredients and I mixed well.
I placed them on a parchment-lined oven tray and baked for 30 minutes (200°).
Watch out! Honey burns super easily.
I served with a sauce made with tahini, water, garlic and coriander; goat cheese chunks; and slices of toasted bread. I suggest you avoid the garlic if you are planning to kiss someone short after eating!
